shit.... i forgot to have RD pick me up a 2nd package of yeast....
ah well, ill see how one works this time i spose... prolly wont start fermenting for a day though instead of a couple hours.

Nyah Razz we hope anyway!!

ok, last can of LME has been added.
15 mins of boiling then add the aroma hops and irish moss.
then another 5 mins.
then bucket, yeast, and seal.
Woot!

well, im done. but im a bit worried due to the temp of the fermenter.... it was quite a bit higher than its sposta be.... nothing to do now but wait and see i guess....

its been an hour and 10 mins since i sealed the fermenter.
still no fermenting action.
but hey, it usually takes around 24 hours to start.
but ive been awesome lately and was able to get em to start in less than 2 hours.
so we'll see....

i confess myself... dissapointed.
i just tried a hydrometer reading on my falls auburn ale and the ABV isnt as high as it "feels"....
of course, im just NOW doing it and youre sposta caculate the ABV before its carbonated and before its bottled.
but we are gonna do that correctly tonight on the latest 10 gallons though.

Woot! it finally started fermenting.
i had to add a table spoon of red star active dry yeast to it thought.
should be ready to bottle by sunday at the latest.

the bottling last night went smoothly and much more quickly too with the new system i have set up downstairs! it only took roughly an hour to bottle 10 gallons worth of beer and that was including a 15 minute piss, smoke, and get another beer break.

on another note, my brother is gonna be pissed off!! the 2 batches me and Blake bottles last night are lighter in color and still maintained their flavor better than anything my brothers ever brewed and hes been trying to make a lighter colored beer for years!! Muhahahaha

oh, and that red star brand active dry yeast looks and smells identical to the brewers yeast we use anyway. if it works just as good, we'll start using that! a $4 jar of red star yeast can get us through atleast a good 50 gallons (10 - 5ga) worth of beer!

If it works like you need it to, why not? I sometimes think that the manufacturers put specialized names on things just so they can charge more.

aye, i agree! of course, i just got off the phone with my brother and now hes worried about "off flavors" or "blowing up the bottles". lol well, im not putting em in the oven!! geez! the yeast works best at 110* - 130* and i pitched it in the fermenter at 70* so im not worried. Wink

i must say, using bread yeast as an emergency operation yeast is acting a bit odd...
ive never seen an air lock bubble this way before. usually the bubbles work in a predictable manner of one bubble per CO2 release. but this time its working in a series of 3 bubbles per CO2 release every 3 to 5 seconds.

that is true!
im almost wondering if the bread yeast is consuming more sugars than the brewing yeast would have? and if thats the case, i can see where my brothers concern is about blowing up bottles.... cause that same yeast will still be active once i add the priming sugar and then bottle it.... i spose since its winter time and the room im planning on storing it in after its bottled is gonna be considerably colder than usual, we'll just have to see. perhaps i can make a rather awesome lager out of it instead of an ale!?

ooooHHhhhhhhh that is interesting!! i would love comment on that thingy too cause ive been able to get beer to start ferment in 1 hour and 5 minutes using brewing yeast even, which pretty much everyone i know who home brews says is impossible!! Muhahahaha
i only used baking yeast this one time and that was for an emergency! lol

i spose i should start keeping quiet eh!? Giggles
