well, im getting ready to bottle this barrel of beer that i had to pitch bakers yeast into... im using a coulpe growlers as theyre bigger and have flip-tops incase the sombitch blows up.... we'll see i spose....
best get on it whilst im motivated.

well, i wont know for sure about the exploding part for a few days while the left over yeast eats the priming sugar....
im HOPING that since i let the fermenter sit for an extra 3 days that it wont though...
but i wont know til its bottled and sat aside.

ok!! well, ive been done bottling for about an hour or so.
the last bottle wasnt quite full so i used it a tasting sample. and suprisingly, it tasted quite great!! i was worried about off flavors due to the bakers yeast as so many "testimonies"(sp) have stated, but im rather impressed with the outcome at the moment!!

earlier tonight, RD and i went to walmart to get some stuff and i found some clearance cloth that was black and thick as hell so we bought 2.5 yards worth. ive tacked it to the ceiling in the bottling kitchen so it drapes all the way to the floor in one corner. im using that as the black out storage area for the bottled beer. which is home to 15 gallons of bottled beer already at the moment!! and by this saturday, a total of 30 gallons!!! Thumbs Up

well, the brewing went great cept for a mishap where a little bit of my corn sugar ended up on the stove and decided to melt and burn ending up smelling like burnt marshmellows! lol

on the positive side, my brew should end up around 10% ABV.
and Blakus' around 9% ABV.

also, the brew i had to add bakers yeast too turned out awesome!! we drank quite a bit of it tonight even though its not fully carbonated! lol

oh! and the batch i brewed the other night is pretty much ready for bottling too! ill either do that tonight or tomorrow night.

its funny you should mention that! i just told Blake before he left that one of the next things we need to buy is more bottles! lol 24 / a case is around $9. i was thinking we need around a million of em. Nyah Razz

Well at the rate you're filling them, that seems reasonable but you probably should wait until you have more storage space for them. Something along the lines of a warehouse....

well, due to the fact that im not even using... oh... say... 1/2 of my house for anything at the moment.......

current note:

i just finished bottling my next to latest brew. the first of my own recipes. and i must say, upon the OST (original sample tasting)..... OMFGs!!!! if it tastes 1/2 as good after its carbonated as it does NOW...... holy fuckin god balls!!! itll be phenomentasticful!!!! Woot!

after due consideration, ive decided to move said batch of bottled beer to the cold room. least ways the yeast activity will slow down or die, one of the two. cause even at below recommended bottling storage temps, theyre way over carbonating....

crazy stuff, Blake's beer was done fermenting by yesterday or the day before so we bottled it yesterday. mine was still fermenting and still is today. looks like i wont be bottling it til tomorrow or tuesday even!!!

ok! the last batch of beer was finally done fermenting! i just got done bottling it. and bloody hell is it tastey AND has kick!! its an amber color.
O.G. reading minus the F.G. reading = 9% ABV exactly!! Woot!

i guess youll just have to be on the guest list for when the brewery gets famous!
and yes, this ale has a bit of stingage going down too! and i have an idea for the next time i brew! i haz idea on how to make one that should be close to 20% if not more without all that aging stuff sam adams is doing for their 27% beer. of course... it might turn out to be a total failure... but if it works, itll definately be a revolution in beer making! and i WILL keep it secret!! Muhahahaha

this next time we brew, we're gonna brew 2 identical batches each to see how exact we are. so 20 gallons worth, 2 - 5ga batches each. im guestimating that my two should come out to around 15% ABV. Blakes should come out around 10% ABV. im debating with myself about possibly making mine even higher than the assumed 15%. but we shall see.

i just want to go on the record to say my 9er ale is awesome and has had extremily high reviews from everyone whos tried it! while the ABV is higher than a standard beer, i was still able to maintain the amazing flavor and aroma.

and in my honest opinion, compared to any other beer ive brewed, and pretty much any other beer ive drank, and ive drank ALOT of different beers worldwide from home brewers to big time breweries from the americas to europe to middle eastern to far eastern! this one is by far one of the best tasting beers i have ever drank. and im not saying that because its one of my recipes or trying to brag either!! of course, i am REALLY looking forward to this next beer im going to brew after having drank the "9er ale" i recently brewed.

lol thats what i was thinking to tell ye the truth! and i know "9er ale" doesnt have much of an original sound or ring to it, but it was the first thing that popped into my head. so far, its been the one beer that both cheap beer drinking men and non-beer drinking women have really liked. it has an excellent cross of both bitterness and flavor that men tend to lean towards and the sweetness and aromaticness that women tend to lean towards. and of course to Blake and myself, its bloody phenominal. and Blake's last brew is pretty similar to mine except with a 2 point lower ABV.

so just as another thought pops into my head....

mine will be called "9er ale". his can be called "lucky 7's". ill give him a call when he gets off work and talk it over with him.
